The world of porky goodness returns for 2015

We're pleased as pork to announce that for the third consecutive year, renowned cook school, Preserved NZ, are returning to The Rippon Hall for their annual weekend of courses entitled 'A Pig in a Day'
PIAD 2014

Running on both Saturday the 25th and Sunday 26th July from 10am-3pm at The Rippon Hall, the 'A Pig in a Day' course allows local food lovers the chance to get involved with a thorough practical demonstration using a free range pig and learn how to make sausages, proscuitto style air-dried hams, brine-cured hams, wet & dry cured bacon, chorizos, salamis & more. The lovely Anna teaches what cuts are best for what, how to make different cures, mincing, casing, hanging aging & smoking.

A delicious home-cooked lunch is enjoyed with Rippon wine, and followed by a chance to create your own signature sausage in the Rippon kitchen.

A weekend of wine events is culminating in a community-focused, family day at the Rippon Cellar Door. We?ll be throwing open the doors to The Rippon Hall and inviting the community to come and try the 2012 wine releases, enjoy a picnic overlooking the view and generally have a lovely time.

The best Popup Restaurant in Wanaka? Popup Dumplings with Tiritiri Kitchen. Full Stop.

This past Friday night was once again Dumplings Night at The Rippon Hall. This was the third time we had invited the brilliant Tiff from Tiritiri Kitchen back to perform her dumpling magic, and she didn?t disappoint.


The Hall was transformed into an impromptu yet casual dining area, complete with roaring log fire, colourful lanterns and Asian tea bits & pieces, all adding to the relaxed vibe.


The menu was too delicious to give it full literary justice here, so instead of a thousand words - here it is (in all its glory):

Peanuts in chilli & black vinegar

Laksa soup with prawn & bamboo shoot dumplings.

Eggplant and black vinegar mini buns. 2 pieces

Thai Sago dumplings with mint, garlic oil & chilli served on a lettuce leaf.? 2 piece

Pork and cabbage water dumplings served in tangy dipping sauce. 3 each. Served with sides of mixed greens with oyster ginger sauce, rice & green papaya salad

Personal favourites include the laksa soup, and Thai Sago dumplings- delivious delicious delicious.


With the relaxed, constant flow of courses and a special Rippon wine list to match,, the evening flowed by, with locals & visitors to Wanaka alike mingling and having a right lovely time.

Tiritiri Kitchen's Popup Dumplings returns to The Hall


Back by popular demand, Tiritiri Kitchen?s Popup Dumpling Restaurant returns to The Rippon Hall this Friday 13th June, from 6.30pm.

This week Tiff is rocking a new menu! To start: a laksa soup with prawn and bamboo shoot dumplings- a fragrant, rich and warming way to start the feast. Followed by five more mouth-watering courses, with a Rippon wine list available to match.

'A Pig in a Day' returns to The Rippon Hall this July

We're thrilled to invite the team from Preserved back this July to share their passion for charcuterie and salumi, the art of salting, brining and curing, meat.

Traditional methods of creating food are seeing a rise in popularity. One of these traditions is nearly as old as time itself, the process, and for many the ritual, of taking the humble pig and transforming it into prosciutto, salami, chorizo, pancetta, bacon and more. A skill that Preserved, a low-tech, high-charm cook school in Canterbury, has seen over the last three years attract everyone from hunters and foodies to home cooks and chefs- and our Wanaka bunch loved it!

The school is family run, with workshops being taught by Anna Mahy. Anna manages to demystify and simplify her craft, drawing you in with her stories, inspiring you with her ?can do? attitude and tempting you with her sweet and salty aged prosciutto.

So the salami?s have been hand-crafted and are curing, and the prosciutto is swinging in the breeze ready for a weekend of workshops planned for this July 12th and 13th.

Anna will take the students through how to make prosciutto, wet and dry cured bacon, chorizo and salami. Everyone will be fully hands on creating their own signature sausages (which you get to take home). A home-cooked lunch with Rippon wine and a booklet with all the info is included.

Wanaka?s much loved The People?s Bread are bringing their skills to The Rippon Hall for an afternoon beginners? bread-making workshop.

Learn how to make your own basic artisan dough: the ingredients, different types of yeasts, kneading techniques and ways to bake baguettes, fougasse, buns, loaves and boules.

Take home your own baked goods, information on what you learned and the confidence to bake bread to your heart?s content!
